A premium flattened rice, Malbhog Sira, made from an aromatic sticky rice by Assam FPO farmers.

“Malbhog Dhan” (a type of sticky rice) which is flattened into thin, crispy rice flakes, then simply serve it with a generous amount of yogurt (preferably thick buffalo milk yogurt) and jaggery, as it’s traditionally enjoyed in Assamese cuisine, especially during the Bihu festival; essentially, it’s a simple dish of flattened rice with a sweet and creamy topping.

Key points about Malbhog Sira:
  • Main ingredient: Malbhog Dhan (a variety of sticky rice) flattened into thin rice flakes (Sira).
  • Serving with: Thick yogurt (preferably buffalo milk yogurt) and jaggery.
  • Occasion: Often eaten during the Assamese festival of Bihu.
How to prepare:
  1. Get the rice: Procure Malbhog Dhan rice.
  2. Flatten the rice: Use a traditional rice flattening method or a modern rice flaking machine to turn the rice into thin, crispy “Sira” flakes.
  3. Serve: In a bowl, add a generous amount of Malbhog Sira, top with thick yogurt, and sprinkle with jaggery to taste.
