“Bhim kol khar” refers to a traditional Assamese alkaline solution called khar, made from the ashes of the Bhim kol banana, an indigenous variety. This extract is used as a key ingredient in Assamese cuisine to make dishes alkaline and is believed to have digestive and other medicinal properties.
How it’s made:
Dry and burn: The peels and sometimes the trunk of the Bhim kol banana are sun-dried and then burned to ash.
Filter: Water is filtered through the ashes to create a lye solution.
Refine: The mixture is left to settle, and the clear alkaline liquid is then used.
How it’s used
Cooking ingredient: The khar is used as a cooking agent in a variety of dishes, such as lentil preparations, vegetable stews, and fish curries. It acts as a tenderizer and gives a unique flavor.
Opening dish: In a traditional Assamese meal, a simple khar dish made with vegetables is often served at the beginning to cleanse the palate.
Medicinal properties: It is believed to have digestive benefits, aid in metabolism, and support gut health.
Other uses: Historically, it has also been used as a natural detergent for washing clothes and as a shampoo for hair.
