Masor Tenga is a light, tangy fish curry from Assam, typically prepared with tomatoes, lemon, or elephant apple (Ou Tenga). It is a refreshing dish, best enjoyed with steamed rice, and is an integral part of Assamese cuisine, especially during summer.
Ingredients: (Serves 3-4)
For the Fish:
Rohu or Catla fish – 500g (cut into medium pieces)
Turmeric powder – 1 tsp
Salt – to taste
Mustard oil – 3 tbsp
For the Curry:
Tomatoes – 2 large (chopped)
Lemon juice (or Elephant Apple – Ou Tenga) – 1 tbsp
Fenugreek seeds (Methi) – ½ tsp
Green chilies – 2 (slit)
Red chili powder – ½ tsp (optional)
Sugar – ½ tsp (optional)
Water – 2 cups
Fresh coriander leaves – for garnish
Instructions:
Step 1: Fry the Fish
Wash and pat dry the fish pieces. Marinate with ½ tsp turmeric powder and salt. Let it rest for 10 minutes.
Heat 2 tbsp mustard oil in a pan until it starts smoking slightly.
Fry the fish pieces on medium heat until golden brown. Remove and set aside.
Step 2: Prepare the Tenga Curry
In the same pan, add 1 tbsp mustard oil if needed.
Add fenugreek seeds (methi) and let them turn golden. Remove the seeds to prevent bitterness.
Add chopped tomatoes and cook until they soften and release juices.
Add turmeric powder, red chili powder, and salt. Stir well.
Pour 2 cups of water and bring the mixture to a boil.
Step 3: Simmer with Fish
Add the fried fish pieces to the curry. Let it simmer for 5-7 minutes.
Add lemon juice or mashed elephant apple (Ou Tenga) and mix well.
Adjust salt and add a pinch of sugar if needed to balance the tanginess.
Step 4: Final Touch & Serving
Add slit green chilies and garnish with chopped coriander leaves.
Turn off the heat and let it rest for a few minutes before serving.
